Slightly sticky, sweet, filling and nourishing is probably the best phase to sum these little power bars up. I’m really pleased with how these came out and I am already thinking up various combinations and versions to try and create new recipes from.
The best thing about these bars is they really are super easy and quick to put together. It’ll make your life much easier is you have a food processor, of course, but then you are good to go!
I’ve worked hard to keep these bars lean and healthy while ensuring they taste good and pack a punch for that pre or post workout snack. These are also handy for a day on the go, wrap them up in a little grease proof paper and you’ve got a portable snack bar to pop in your bag.
what you need (makes 8 bars);
- 1/2 cup dates
- 3 tbsp date syrup
- 2 tbsp almond butter
- 2 tbsp coconut oil
- 1/4 cup cashews
- 1/4 cup raisins
- 35g mixed seeds (I used a mix of pumpkin, sunflower and linseed)
- 1/2 cup puffed quinoa
- 2 tbsp chocolate protein powder ( I used Prana vegan protein powder but you could use whatever you have or sub for 1tbsp cacao powder)
what you need to do;
Start by lining a loaf tin with grease proof paper, making sure the paper comes up the sides of the tin – this will make it easier to lift the whole lot out.
In a food processor, pop in the cashew nuts and blitz until just a few chunks remain. Remove the nuts and place in a bowl.
Next, add the dates, date syrup, almond butter and melted coconut oil to the food processor and blitz until smooth. Once the mix is smooth (you may need to stop and scrape the bowl down a couple of times) place the cashews back in along with the protein powder and pulse everything together. You want to make sure everything is evenly distributed without creating a smooth paste.
Empty the mixture back into the bowl and stir in the raisins, mixed seeds and puffed quinoa until everything is evenly coated and sticky. Spoon this into your prepared tin, pressing down firmly to ensure it is completely packed together and set in the fridge for about an hour.
Once chilled, remove the mixture from the tin and slice into 8 bars. You can enjoy these straight away of keep wrapped up in little pieces of grease proof paper for snacking on the go.
