easy peach crumble

You know that post-Sunday dinner feeling? Where you need something sweet and comforting to follow your big roast dinner? This easy peach crumble fills that void and cuts out the guilt too! Winning!

I’ve been on a mission lately to create easy and fuss free recipes and I think this one ticks that box. You don’t need any fussy ingredients and could easily sub things for what you have in your cupboards. You just need some fresh peaches and the rest is store cupboard ingredients. Winning again!

I served this up with total zero Greek yoghurt but I also recommend dairy-free coconut yoghurt. If you are wanting to be a bit more indulgent then go ahead and serve with pouring cream or maybe even ice cream! If you’re vegan, how about your favourite banana ice cream?

ingredients (serves 2)

  • 2 just ripe peaches
  • 2 tsp honey (or sub for agave or maple syrup if vegan)
  • 1 tsp cinnamon
  • 75g oats
  • 35g ground almonds
  • 1.5 tbsp date syrup
  • 1 tbsp coconut oil

what you need to do;

Start by pre-heating your oven to 180°C. Then take to de-stoning the peaches. Slice them in half and carefully remove the stone. Then slice each half into 4 to 6 slices. Lay all the slices into a small casserole or baking dish.

Drizzle the peaches with the honey and sprinkle over the cinnamon. Pop in the oven for 10 minutes.

Meanwhile make the crumble. Melt the coconut oil and agave in the microwave and stir to combine. It shouldn’t need more than 30 seconds to melt and come together. Stir all the dry ingredients together and then mix the oil and agave in using a fork to combine. You will have some bits that combine better than others, that’s what gives the crumble it’s uneven texture when baked.

After 10 minutes, remove the peaches from the oven and sprinkle with the crumble mixture. Place the dish back in the oven and bake for another 20 minutes. Keep an eye on it after 15 minutes to ensure the top doesn’t burn.

Serve the crumble straight away with a topping of your choice, or enjoy on it’s own. Go the extra mile and drizzle with date or maple syrup!
